Balsamic Roasted Vegetables

Most of the new recipes I have been trying and telling you all about here have been for sweet dishes, but after finding this recipe on irunforicecream, I just had to try it. I love balsamic vinegar, I am always trying to finding new things to eat it with – even pizza – try it it is so good! So this recipe seemed perfect for me, I changed it a little bit, mainly just which vegetables that I used, but the end results were delicious and this is my recipe;


  • 500g of Potatoes
  • 2 x Peppers
  • 2 x Red Onions
  • 4 x Medium Carrots
  • 4tbsp of Balsamic Vinegar
  • 4tbsp of Oil (I used Rapeseed)
  • Salt and Pepper to Taste

  1. Preheat the oven to 190 degrees
  2. Chop up all of the vegetables into chunky pieces and place in a bowl
  3. Put the balsamic vinegar, oil, salt and pepper into the bowl and shake until all the vegetables are covered
  4. Pour the coated vegetables into an oven dish
  5. Put into the oven
  6. After 30 minutes stir the vegetables and put back into the oven
  7. Again after another 30 minutes stir the vegetables and put back into the oven for the final 15 minutes
  8. Remove from the oven and serve

I actually boiled my potatoes for 10 minutes when I made this dish last night, but they were a little over-cooked and the other vegetables had pototoes mush on them, so I have taken that step out as I will not boil them when making it again. However, the vegetables were still delicious and we ate them just like this and it was the perfect meal for a Summer’s evening.

My Cooked Balsamic Vegetables

In future I think that I will be making my carrrots and potatoes like this to accompany my Sunday Roasts. They were crispy and juicy and the hint of balsamic vinegar was a refreshing change. And although they take a long time in the oven it was really easy to make and gave me the opportunity to get some things done around the flat whilst they were cooking.
