Blondies, what are Blondies right? It is actually just Brownies made with White Chocolate instead of Milk or Dark Chocolate. Another recipe from Mr Ramsay but with my own twist!  Here is my recipe:


  • 230g of Butter
  • 340g of Brown Sugar
  • Pinch of Salt
  • 1tsp of Vanilla Extract
  • 2 Lightly Beaten Eggs
  • 280g of Plain Flour
  • 1/2tsp of Bicarbonate of Soda
  • 1tsp of Baking Powder
  • 240g of White Chocolate Cut into Chunks
  • 100g of Crushed Walnuts


  1. Preheat the oven to 180C
  2. Lightly grease a large square cake tin and line with baking paper (helps it stick smoothly)
  3. Melt the butter in a saucepan and whisk in the sugar and salt
  4. Add the vanilla extract and whisk again then remove from the heat
  5. Add the lightly beaten eggs to the butter mixture and stir in well
  6. In another bowl sift the flour, bicarbonate of soda and baking powder
  7. Then add the egg and butter mixture gradually whilst whisking
  8. Leave the mixture for 10 minutes to allow it to cool slightly
  9. Then fold in the white chocolate chunks and crushed walnuts gently
  10. Spoon the mixture into the prepared cake tin and spread evenly
  11. Bake in the oven for 30-35 minutes until the outside is firm but the middle remains gooey
  12. Once cooked leave to cool on a wire rack for 20 minutes then cut into chunks to serve

I love white chocolate, maybe even more than I love milk chocolate and these Blondies did not disappoint. Mine were maybe cooked for a little bit too long so I have reduced the cooking time in this recipe, if you make them I would love to know how they come out for you!
