Homemade Tomato Sauce

I am on holiday at the moment so I have scheduled this post for my generic Tomato Sauce Recipe. It is a must have for your cooking basics, I use mine for my Lasagna, Chilli, Spaghetti Bolognese, Spaghetti with Meatballs and pretty much anything that involves Tomato Sauce. Here is my precious recipe;

Ingredients

  • 1 tin of Chopped Tomatoes
  • 2tbsp of Tomato Puree
  • 1 Large Onion Finely Chopped
  • 1 Red Pepper Finely Chopped
  • 1 Small Carrot Finely Chopped
  • 3 Cloves of Garlic Pressed
  • 1tbsp of Lemon Juice
  • 1tbsp of Lime Juice
  • 1tsp of Chicken Stock Powder
  • 8tbsp of Paprika
  • 1tsbp of Dried Chilli Flakes
  • 3tbsp of Mixed Herbs
  • 1tbsp of Coriander
  • Salt and Pepper to Season
Homemade Tomato Sauce

Method

  1. Fry the onion and garlic in olive oil for 5 minutes until lightly coloured
  2. Then add the pepper and carrot and stir for a further 2 minutes
  3. Before adding the paprika, chilli, coriander, mixed herbs, salt and pepper and stirring for 30 seconds
  4. Then add the tinned tomatoes, tomato puree, lemon and lime juice and chicken stock and bring to the boil
  5. Once boiling turn down to a low heat and simmer for 20 minutes stirring regularly

This Tomato Sauce recipe works for me every time and is so delicious and versatile, you can add more chilli for a spicier sauce or add more puree if you want it to taste a little sweeter but I find that with this basic recipe there is nothing that I cannot make! What are your most important kitchen basics?
