Chocolate Cupcakes with Peppermint Icing

You all know cupcakes are my thing and when we had a party here is Berlin to celebrate our wedding (I just cannot help mentioning it) I wanted to make a yummy cake for our friends who were not at the wedding and could not try Our Wedding Cake. However, the task of making a cake big enough for 50-60 people was pretty daunting. I then decided that I would play it safe, deliciously safe of course and  baking a massive batch of cupcakes!

Some of them were trusted flavours that I make time and time again, however there were a few new ones. So today I am sharing my recipe for Chocolate Cupcakes with Peppermint Icing:


  • 75g of Plain Flour
  • 25g of Cocoa
  • 100g of Sugar
  • 1tsp of Baking Powder
  • 1/2tsp of Bicarbonate of Soda
  • 100g of Butter
  • 2 Eggs
  • 200g of Icing Sugar
  • 10ml of Peppermint Flavouring
  • 40ml of Water

  1. Preheat the oven to 180C (Fan) and put your cupcake cases into your tray
  2. Sift the sugar into a bowl and add the butter and cream until smooth
  3. Then sift in the flour, cocoa, bicarbonate of soda and baking powder and mix until crumbly
  4. Then add the eggs and whisk until smooth
  5. Then spoon into your cupcake cases and bake for 10-12 minutes until cooked (the best way to tell is to gently push the cupcake and if it springs back, it is ready)
  6. Once the cupcakes have cooled you can start on the icing
  7. Sift the icing sugar into a bowl
  8. Add the peppermint flavouring and half of the water
  9. Gradually combine the sugar with the water until your icing is thick but still fluid, you can add more water if you need but remember it should be very thick icing
  10. Then take a spoonful of the icing and drop onto the highest point of the cupcake, spread it by tilting and turning the cupcake so it flows down the sides
  11. Then set aside and it will continue to fall leaving a smooth shiny finish

I sound very negative as I was also not a fan of these Chocolate Cupcakes with Peppermint Icing, however I will not be changing the recipe as my friends absolutely loved them! So a great recipe if you love Peppermint I think!
